Salting them before adding the other ingredients will draw out their flavours and make your EVOO and balsamic almost soupy – the final spoonfuls of deliciousness at the end. We’ve tried different bocconcini varieties and prefer the creamy texture of buffalo bocconcini mozzarella for a creamy texture and we have a good handful of basil ready to be picked in the garden for a fragrant aroma. Finish it off with a drizzle of our artisanal extra virgin olive oil and white balsamic vinegar for a touch of sweetness and acidity.

Caprese Salad

Our own take on the classic Italian Caprese Salad

Ingredients
-
500g Heirloom Medley Cherry tomatoes and extra yellow cherry tomatoes
-
160g Buffalo Bocconcini - we often use La Stella

½ teaspoon Olsson’s Seat Salt Flakes for sprinkling

4 Tablespoons Morella Grove Extra Virgin Olive Oil

2 Tablespoons EuroPantry Aged White Balsamic Condiment

A good handful of fresh basil leaves, stalks and flowers removed
Directions
Rinse your tomatoes, slice into halves and sprinkle the salt over them, mix and let them sit for 5-10 minutes
While your tomatoes are being salted, rinse your basil and give it a good shake before tearing the leaves into pieces.
In a separate bowl, drizzle the EVOO into the balsamic and whisk together
Spoon your salted tomatoes into separate bowls, tear the bocconcini into pieces and sprinkle onto your tomatoes along with your freshly torn basil.
Drizzle your EVOO and white balsamic over all.
