Ingredients

1 x cup basmati or long-grain white rice

1.5 x cups vegetable broth

1 x tbsp olive oil or butter

1 x small onion, finely chopped

2 x cloves garlic, minced

½ x tsp turmeric powder

½ x tsp cumin seeds or ground cumin

½ x tsp salt (adjust to taste)

¾ x cup green peas (fresh or frozen)

1 x bay leaf (optional)

½ x Juice of a lemon (for freshness)

Fresh cilantro or parsley for garnish
Directions
- 1. Rinse & Soak the Rice
- Rinse the rice under cold water until the water runs clear. If time allows, soak for 15 minutes, then drain.
- 2. Sauté Aromatics
- Heat oil or butter in a medium saucepan over medium heat. Add cumin seeds (or ground cumin) and sauté for 30 seconds until fragrant. Add chopped onion and garlic, cooking until softened.
- 3. Add Spices & Peas
- Stir in turmeric, salt, and bay leaf (if using). Add the peas and cook for 1 minute, allowing the flavors to develop.
- 4. Cook the Rice
- Add the drained rice and mix well to coat with the spices. Pour in 1.5 cups of water or broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 12-15 minutes until the liquid is absorbed.
- 5. Rest & Fluff
- Turn off the heat and let the rice rest for 5 minutes before fluffing with a fork. Squeeze in fresh lemon juice and garnish with cilantro or parsley.
