Chilli Garlic Prawn Spaghetti

Ingredients

250g La Molisana Spaghetti or Spaghettini

3 Tbsp Morella Grove Extra Virgin Olive Oil
-
150g Cherry Tomatoes
-
150g Tiger Prawns
-
Ivy’s Homemade Garlic Chilli Oil
-
Olsson’s Mountain Pepper Blend to Serve
-
Olsson’s Pure Sea Salt Flakes to Serve

Parsley to garnish
Directions
In a large pot, bring 3 litres of water to the boil. Once the water is boiling, salt generously, add the pasta and cook for 9 minutes. Do not add any oil to the pasta water.
While your pasta is boiling, add EVOO to a hot frying pan and cook until is is just smoking. Add cherry tomatoes and cook until their skins blister.
Add 2-4 Tbsp of your pasta water to the pan and stir to emulsify.
Add prawns to the emulsion, stirring and cooking quickly for 3-4 minutes only. Cooking too long will make your prawns rubbery.
Turn the pan heat off.
Drizzle Ivy’s Homemade Garlic Chilli Oil over your emulsion
By now your pasta should be al dente
Drain your pasta into a colander and add to the pan with other ingredients. Stir and add salt and pepper to taste. Serve and garnish with parsley.
