This hearty Guinness Beef Pie is a classic Irish comfort dish, perfect for cozy nights or St. Patrick’s Day celebrations. Tender beef is slow-cooked with Guinness beer, carrots, onions, and sweet peas, then topped with a golden, flaky crust. Rich, flavourful, and easy to make, this pie is a delicious way to enjoy traditional Irish cuisine.

Ingredients

500g beef cubes (chuck, sirloin, or brisket)

300ml Guinness

200ml beef or chicken Stock

2 onions, chopped
-
3 carrots, sliced
-
50g sweet peas (frozen or canned for ease)

10g dark chocolate (trust me on this one!)

1 garlic clove, finely chopped

2 tbsp butter (or olive oil)

1 bay leaf

Salt to taste

Pepper to taste

Directions
Season your beef cubes generously with salt and pepper and flour. You want to flavour every bite, not just the outside.
Personally I add the salt, flour and pepper in to a plastic bag and shake it about until all your stake is covered in ingredients
Heat the butter or oil in a large skillet or Dutch oven over medium-high heat. Add the beef cubes and sear them until they're golden brown on all sides, locking in the flavor. Once browned, remove the beef from the pan and set it aside for later.
After removing the beef, deglaze the pan by pouring in a splash of Guinness beer or broth. Use a wooden spoon to scrape up all the flavourful, caramelized bits stuck to the bottom—these will add rich depth to your dish. Let the liquid simmer for a minute to absorb those flavours.
Toss in the chopped onions, garlic, and carrots. Stir everything together, letting the vegetables soak up the rich flavors from the pan. Cook until the onions are just caramelized and the carrots start to soften, releasing their sweet aroma throughout your kitchen.
Pour in the beef broth and add the bay leaf, seasoning again with salt and pepper to taste. Then, slowly pour in the remaining Guinness, letting it mingle with the rich flavors in the pot. And hey, no judgment if the chef sneaks a little sip—it's all part of the experience! Stir everything together and bring it to a gentle simmer.
Place the Dutch oven back into the oven and cook at 180°C (350°F) for about 30/45 minutes, or until the crust turns beautifully golden.
Just two minutes before the timer is up, stir in the sweet peas and—yes, you heard right—a touch of dark chocolate. The chocolate will melt into the sauce, adding an incredible depth and richness without overpowering the dish. It's the secret ingredient that takes this pie to the next level!
