5 x Quail, butterflied & de boned

½ lemon, juice

2 x figs, cut in half

Sea salt to taste

1- 2 x tsp chilli Oil (More if you like it hot)

2 x tbsp Pukara Estate Premium

1 x tsp Pukara Estate Fig Balsamic

1 x tsp chilli Oil (More if you like it hot)

¼ lemon, juice

Quail Marinade
Fix Balsamic Glaze
Directions
Place quail onto hot char grill and cook for approx 2-3 minutes on each side before removing and placing onto a warming plate.
Place figs in a bowl with fig balsamic, a drizzle of olive oil, a pinch of salt, lemon juice and chilli and mix together until figs are coated.
Once figs are coated, place onto char grill and cook for approx 2-3 minutes each side before placing on top of quail with a drizzle of dressing over the top.
