Ingredients:
- 600 g / 1.2 lb scotch fillet steak / boneless rib eye
- 2 tbsp vegetable oil, divided.
- 1 large onion (or 2 small onions), sliced.
- 300 g / 10 oz mushrooms, sliced.
- 40 g / 3 tbsp butter
- 2 tbsp flour
- 2 cups / 500 ml beef broth, preferably salt reduced
- 1 tbsp Dijon mustard
- 60ml good quality Brandy
- 150 ml / 2/3 cup sour cream
- Pinch of Malden Salt flakes
Serving:
- 250 - 300 g / 8 - 10 oz creamy mashed potatoes
- Chopped chives for garnish (optional)
Instructions:
- Flatten the steaks to about 3/4cm / 1/3" thick and slice into 5mm / 1/5" strips. Season with salt and pepper.
- Heat 1 tbsp oil in a large skillet over high heat. Sear half the beef until browned, then transfer to a plate. Repeat with the remaining beef.
- Reduce heat to medium-high and remove beef from the pan.
- Add good quality Brandy to the pan and allow it to burn off.
- Add butter to the skillet and sauté onions for 1 minute, then add mushrooms and cook until golden.
- Stir in Dijon mustard and cook for a few seconds to enhance the flavours of onions and mushrooms.
- Sprinkle flour over the mushrooms and cook for 1 minute, stirring constantly.
- Gradually add the beef broth while stirring, then stir in sour cream until well combined.
- Simmer until the sauce thickens to a creamy consistency, adjusting salt and pepper to taste.
- Return the beef to the skillet and simmer for 1 minute. Remove from heat.
- Serve the creamy Stroganoff sauce over creamy mashed potatoes, and garnish with chopped chives if desired.
