Shottsuru is a fish sauce crafted from sandfish in Akita Prefecture, Japan. Its unique flavor is milder than other Southeast Asian varieties and can easily be added to a variety of dishes - both Western and Japanese. Following a downturn in production in the early 1990s, one man, Hideki Moroi, set out to revive this exquisite, artisanal product.
Composed of a pleasant saltiness and a rounded flavor, Shottsuru can be used as a source of umami to enrich soups, stews, vegetables, rice, and grilled meats.
